This is a chili I love to make, perfect balance and flavor between the veggies and seasoning. Farmhouse goodness!
INGREDIENTS
- 1 LB Ground Chorizo
- 4 LB Ground Beef
- Olive Oil
- 5 Red Onions
- 6 Red Peppers
- 5 Garlic Cloves
- Jalapenos De-Seeded
- 4 Large Cans of Whole Tomatoes
- 1 Can Red Beans
- 1 Can Kidney Beans
- 1 TSP Cayenne
- 1 TBSP Cumin
- 1 TBSP Chili Powder
- Salt and Pepper
- Mexican Cheese
- Sour Cream
- Green Onion
INSTRUCTIONS
- Finely chop the onions, chop the peppers, smash the garlic
- Cook Ground Beef and Chorizo in pot or pan in small batches with olive oil
- Cook Onions until soft and starting to caramelize
- Continue cooking onion and add peppers and garlic to onions
- Cook until pepper start to soften
- Add meat and continue stirring
- Add Seasonings to pot
- Mix well and then add canned tomatoes, mix well
- Place pot in the oven and bake at 350 for 4 hours
- Remove from oven and add beans, mix well
- Put back in the oven for another 30 minutes
- Serve with Mexican cheese, sour cream, and green onions as a garnish
NOTE: If you are using a crockpot, instead of baking you can leave it in the crockpot on low for 6 hours.
